Ginger-Basil Peach Smoothie

My daughter and I created this smoothie together. She loves candied ginger, which we added, although a smaller amount of fresh ginger could also work. We have actually tried it with both mint and basil, both work beautifully. Adding soda water or seltzer gives it a fun sparkle, but your favorite milk would work too especially to make creamier. We have made this often enough that I have also snuck in yellow summer squash, which she likes to tell me she doesn’t like zucchini, but blends in perfectly without much notice. Add it or not, but whatever you do, don’t tell her about it! ;-)

Ingredients

  • 1 inch piece candied ginger, add more of less as you like, fresh ginger works well too, but start with half the amount
  • 1 peach, pit removed, cut into big chunks, fresh or frozen
  • 1 banana, frozen in chunks
  • ½ cup summer squash, preferably yellow squash, but green zucchini could work instead
  • ¼ cup fresh basil, or fresh mint
  • 1 cup soda water, more if needed

Serving Size: 2 People



 

Preparation Instructions

Since the candied ginger and frozen fruit need the most time with the blade, I typically add these towards the bottom of the blender. Otherwise, toss it altogether and blend until creamy and smooth. Add more water or scrape the blender periodically to help it blend faster.
