Teff with Italian Plums

If you are unfamiliar with teff, it is a staple grain in Ethiopia, and is the world’s smallest grain. It is often ground into flour and made into injera, the rolled, soft, delicious flatbread served at Ethiopian restaurants that functions as both plate and utensil for spooning up delicious stews. Whole teff is wonderful served as a cooked grain, and its deep, rich flavor is an excellent compliment to sweeter
breakfast foods. Pairing the teff with plums, seeds, and almond butter fills out the nutrition for this simple meal. Thank you Dr. Kaycie Rosen Grigel for contributing this delicious breakfast dish!
