Chili Bean Quesadillas

Prepare the Chili Bean Saute or better yet, start with leftovers. Make the quesadillas and either tuck this mixture inside or pile high on top almost like a hot and steamy tostada. If taking on the go, store these separately. Heat or enjoy cold or at room temperature.

Chili Bean Saute

Ingredients from a comforting bowl of chili are made into a quick saute that is on the table in a flash. This is great on top of something starchy such as rice, grits, polenta or even a pile of Lime Sweet Potatoes. Extra protein such as a sprinkle of cheese or your favorite meat would be lovely too. Hatch chilies are easy to find roasted, fresh, frozen or canned, but anaheim chilies substitute nicely and are easy to roast if necessary.

Green Chili Quesadillas

Perfect as a quick snack, appetizer, or as an easy side for Mexican soups, rice or bean dishes. If you do not have fresh southwest hatch chilies available, seek out frozen green chilies. Otherwise, the green chilies diced and in a can will work too.
