Pomegranate Persimmon Salsa over Pork Quesadillas

1. Start to sear the quesadillas.
2. Chop up the ingredients for the salsa.
3. If taking on the go, store the salsa and the quesadilla separately. Warm the quesadilla just before eating if desired. Or enjoy it at room temperature.

Pork Quesadilla with Fruit Salsa

Such a simple way to use up leftover pork. Add extra seasonal vegetables as available. Top with Pomegranate-Persimmon or Cherry Salsa are ideal when in season, but another fruit salsa will substitute nicely as available.
