Turkey Salad Sandwich

Turkey sandwiches are the classic dish for Thanksgiving leftovers. Try making the turkey into a creamy salad instead. A hint of orange is our secret ingredient. Place on a bed of lettuce for a few more vegetables and/or place on your favorite bread.

Ingredients

  • 2 tablespoons mayonnaise
  • 2 tablespoons plain yogurt, or more mayonnaise instead
  • 1 teaspoon honey, optional
  • 1 orange, zest and juice
  • 1 cup turkey, cooked and shredded or in chunks
  • ¼ cup pecan, crumbled
  • 2 tablespoons dried cranberries
  • 2 stalks celery, finely chopped

Serving Size: 2 People



 

Preparation Instructions

Whisk together the mayonnaise, yogurt, and honey. Add a generous pinch of the orange zest and a splash of the orange juice. Whisk. Taste. Add more orange zest & juice until to your personal taste.

Fold in the turkey, pecans, cranberries, and celery.

Serve on a bed of lettuce or in a sandwich of your favorite bread.
