Caramelized Lemon & Pistachios

Add flavor to a roast or a soup or whatever needs a tangy-sweet-nutty topping.

Ingredients

  • 1 lemon, rinsed
  • 1 teaspoon salt
  • 1 tablespoon olive oil, divided
  • 1 teaspoon butter, unsalted, optional
  • ½ cup pistachios
  • ¼ cup water, or more if needed

Serving Size: 4 People



 

Preparation Instructions

Chop the lemon into small pieces, removing any seeds along the way. Sprinkle with the salt.

Heat the olive oil and butter over medium heat. Add in the salted lemon and saute lightly until it starts to turn golden.

Mince the pistachios and toss in once the lemons start to caramelize. Saute lightly to give the nuts color.

Pour in the water, simmer up and as soon as the liquid is absorbed, the lemons should be softened and ready to enjoy.
