Week of November 22, 2015

The week has arrived for Thanksgiving everything!

There are brand new recipes that I have been working up for Turkey Day with a special focus on less starch, less dairy and significantly more plants overall. The Creamy Cauliflower Green Bean Casserole is a rich, creamy + luscious version of the highly processed dish without a drop of dairy. Pair it with the Cranberry Roasted Acorn Wedges that are roasted up after a marinade of cranberry juice.

While a bit starchier, the vegan Roasted Garlic Mashers focus on the potatoes, roasted garlic and not much else is in this simple side. Smother it with the flavorful Mushroom Gravy that will make you consider substituting this vegan sauce for the turkey version. Serve the mashers with the Honey-Butter Brussels Sprouts for a simple weeknight dinner.

The gluten-free Roasted Root + Polenta Stuffing is my favorite new stuffing as it holds all the traditional flavors of Thanksgiving together with more veggies than ever before and the polenta brings it altogether in a balanced dish that you simply must try. Serve leftovers the next morning for breakfast with a Runny Egg on top.

Want a unique main dish? Try the Wild Stuffed Pumpkin with an easy Cranberry Glaze to drizzle around. You could double up on the wild rice and prepare this Harvest Rice Salad as well that can serve beautifully for a lunch on the go with the Cranberry Acorn Wedges.

Not to be forgotten, the Turkey! For the last couple of years, I have been Dry-Brining my turkey and am finally sharing my secrets with you. It is the easiest path to a moist turkey that I have ever made. If you have any questions or concerns, please email me or let’s chat about it in the Facebook Group.

Want to take Thanksgiving under the sea? The Pecan Tilapia is one of my favorite ways to do that. Pair it with the Cranberry Cherry Syrah Sauce to make it extra special. Extras of the sauce, become a beautiful breakfast of Cranberry Persimmon Parfait.

The Roasted Cauliflower Soup is one of my favorite simple ways to take advantage of turkey Broth.
