Horseradish Dressed Greens

Pungent horseradish plays well with crisp lettuce greens for this simple flavor packed salad. Add more horseradish depending on the strength of the flavor. It varies from root to root, so add more to your personal taste. Use a veganaise mayonnaise or your preferred creamy spread instead of the yogurt to make this vegan.

Ingredients

  • 1 tablespoon horseradish, grated
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons greek yogurt, or mayo/vegenaise if making this dairy-free/vegan
  • 1 pinch salt
  • 1 pinch black pepper
  • ¼ cup extra-virgin olive oil
  • 4 cups lettuce

Serving Size: 2 People



 

Preparation Instructions

Whisk together the horseradish, vinegar, yogurt, salt and pepper. Slowly drizzle in the olive oil while whisking rapidly. Taste. Add more horseradish, salt or pepper as desired.

Wash and dry the lettuce. Tear into pieces. Toss in the dressing and serve immediately.
