Honey Fennel Chicken, Scalloped Potatoes & Salad

1. Prepare the scalloped potatoes first.
2. As soon as they are in the oven, wash and dry the spinach and dressing, but wait to toss until just prior to serving.
3. Sear the chicken with the fennel.
4. Finish by tossing the salad and serving the potatoes.

Fennel Chicken with Honey Pine Nuts

Honey sweetened & buttery pine nuts are kissed with chunks of fresh fennel and drizzled over chicken. It is a simple dish that comes together quickly. We also call for the elusive fennel pollen. This can be found online through www.fennelpollenspice.com. Alternatively, use ground fennel seed, which is much easier to come by and considerably cheaper.

Fennel Scalloped Potatoes

A simple scalloped potato dish is more inspired with a topping of buttery fennel bulb slices. Make this even more magical with a pinch of fennel powder or ground fennel seed. If you have fronds and stems on the fennel, just slice up whatever appears edible and sauté along. A little pinch of the fronds make a nice garnish, too.

The dressing is simple and therefore best if using the highest quality ingredients. Freshly ground black pepper and a fruity extra-virgin olive oil will make this salad incredible as you can taste each flavor.
