Week of March 6, 2016

For the last few weeks I have been spending time with my Mom as she traveled with me and my two little ones. What a blessing! Sadly, we will not be together for her birthday this week, but as I have done in the past I always love to share a meal plan for her this time of year.

She loves mushrooms. We recently discovered so does my two-year old who ate all of the mushrooms out of her crepe on our recent trip! Blending mushrooms into a Silky Mushroom Soup would make her very happy. Saving the extra soup to toss into the Mushroom Pasta + Tuna Casserole would make her extra happy since she is resourceful like that. (Where do you think I learned it from!?)

She also would be happy starting the week with a Lemon Whole Roasted Chicken paired with a Roasted Beet + Blue Cheese Salad. I imagine her using the bones to make a luscious broth that will serve the Mushroom Soup nicely.

Growing up one of my favorite dishes that she would make are nachos baked up with layers of beans, chips and cheese. I have taken that dish to a new level by adding as many winter veggies as I can squeeze in to these Winter Nachos serve them with a generous dollop of Guacamole.

Another playful dish is to tuck a beet, turnip + quinoa filling into leaves of lettuce with a dollop of Avocado Tahini. I even gave it a puny name of Lettuce Turnip the Beet Wraps. (I hope that makes you + my Mom giggle). Extras of the Avocado Tahini are lovely dolloped on Egg Sandwiches for breakfast the next day.

I learned to love pate through my Mom, who learned to love it from her father. So, in honor of both my Mama and my sweet Grandpa try these Pate + Marmalade Sandwiches.

As I look out on this gloomy day, and I know signs of spring are starting to peek through at my childhood home, this Dreaming of Spring Pasta Salad seems beautifully appropriate this week.

Similar to me, my Mom likes a good protein boost for breakfast. This Coco-Nutty Granola hits the spot with a hint of sweetness, but so many nuts that you will be happily satisfied all morning.
