Spinach & Wild Rice Soup

Soothing and simple, start with a flavorful homemade broth, vegan or with bones for a nutritional boost. For a complete simple meal, add flavorful baked tofu or chunks of chicken for extra protein. Starting with cooked rice is what makes this dish come together in 20 minutes.

Ingredients

  • 4 cups broth, chicken or vegetarian broth
  • 1 onion, small, finely chopped
  • 1 teaspoon herbs de provence, or more to taste
  • 2 cloves garlic, finely minced
  • 1 lemon, cut in half
  • ½ cup wild rice blend, or brown rice, cooked
  • 10 ounces spinach, frozen or double the amount fresh
  • 1 pinch salt, to taste
  • 1 pinch black pepper, or a few grinds of fresh, to taste

Serving Size: 2 People



 

Preparation Instructions

In a soup pot over high heat add in the broth, onion, herbs de provence, and garlic. Bring up to a boil for 10 minutes.

Stir in the half of the lemon and cooked wild rice, bring back up to a simmer for about 2-3 minutes. Toss in the spinach. Let it come back up to a simmer for a couple more minutes. Taste. Season with a touch of salt & pepper to taste.

Serve with a few sections of lemon to be juiced on top at the table.
