Fresh Herb Grilled Chicken

Grilled chicken is tossed with fresh herbs, lemon and olive oil just prior to serving. Using bone-in and skin-on chicken will help retain moisture and flavor.

Ingredients

  • 1 lb chicken, breasts, thighs or wings
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons extra-virgin olive oil
  • 1 lemon, juiced
  • ½ cup fresh herbs, chopped, such as parsley, basil, thyme, mint

Serving Size: 2 People



 

Preparation Instructions

Heat a grill to medium-high heat. Season the chicken generously with salt and black pepper.

Grill on each side for 7-12 minutes, depending on their size, until it feels firm, but not hard to the touch. Double check, by slicing. The juice will run clear when it is done.

Meanwhile, toss together the olive oil, lemon juice, and fresh herbs in a large bowl. When the chicken is done, liberally toss and coat in this marinade. Serve with a bit more sauce on the side for dipping.
