Creamy Lemon Cherry + Snap Pea Pasta Salad

Creamy pasta salad gets a sophisticated upgrade with jewel cherries and crispy snap peas. Cauliflower gives it a nearly hidden veg, while the pickles give a flavor boost. The creamy dressing can be made dairy free by substituting all-mayonnaise or even vegan with your favorite veganaise style mayo. Walnuts are a great trade for the cheddar or swiss. If for some reason you are not into mayo, greek yogurt can be the entire dressing; maybe whirl in a bit of olive oil for a little extra body and flavor.

Ingredients

  • ½ lb pasta, your favorite shaped pasta, whole wheat or brown-rice for a gluten-free option
  • 2 teaspoons salt
  • 1 lemon, zest and juiced
  • 1 tablespoon dijon mustard
  • ½ cup greek yogurt, or more mayonnaise instead
  • ½ cup mayonnaise, or more greek yogurt
  • 1 cup snap peas, cut in half
  • 2 cups cauliflower, broken into pieces
  • 2 green onions, thinly sliced
  • ½ cup pickle, minced in bits
  • ½ cup cheddar cheese, preferably white or a swiss would be nice, minced into bits, or substitute crumbled walnuts
  • cup cherries, cut in half and pitted
  • ½ teaspoon black pepper, or more to taste

Preparation Instructions

Bring a large pot of water to a boil. Add the pasta once it is at a rolling boil and a generous pinch of salt.

Whisk together the lemon zest, juice, mayonnaise and greek yogurt to create the dressing.

Chop up the veggies, pickles, cheese and cherries if that is not already completed.

When the pasta has only about 2 minutes left to cook, when it is nearly done, toss in the cauliflower bits.

Drain the pasta and cauliflower when ready and rinse with cool water until it is chilled. Shake it dry.

Toss the pasta, veggies, pickles, cheese or nuts and cherries altogether. Season with the salt and pepper. Toss. Taste. Add more of any ingredient that you feel is necessary and enjoy at room temperature or chilled.
