Chicken de Provence with Cherry Wild Rice

1. Cook up the rice.
2. Chop all of the remaining ingredients for the salad.
3. Assemble and cook up the chicken.
4. Toss the Cherry Wild Rice together, serve together.

Cherry Wild Rice

Caramelized cauliflower & onions with a wild rice blend are drizzled with a tangy red wine vinaigrette, a generous handful of cherries, herbs and walnut bits. Make this a main dish salad, by adding extra walnuts, shredded chicken or chunks of your favorite cheese, such as feta, sharp white cheddar or even blue.

Grilled Chicken de Provence

A sprinkle of Herbs de Provence enhances these chicken fillets without a lot of extra work. Pound boneless chicken, breasts or thighs, to an even thickness, but not too thin. Rub the herbs between your fingers before you apply to bring out a bit more flavor.
