Peach Custard Baked Oatmeal

from Peach Custard-Baked Oatmeal, the Week of August 21, 2016

Imagine a cross between bread pudding and oatmeal. This custard-oatmeal is given extra love with thin slices of peaches on top, on bottom and throughout. This is a great dish to make the night before and then bake in the morning for 20-30 minutes while you are getting ready for your day. Leftovers are tasty too, so make a large batch to be enjoyed over a few days. Just change the number of servings.*

Ingredients

  • 2 eggs
  • 1 cup milk
  • 1 tablespoon honey, more or less to taste as desired
  • 1 teaspoon almond extract
  • 1 pinch salt
  • ¾ cup rolled oats
  • 2 peaches, thinly sliced, chop half
  • ¼ cup pecan, crumbled

Serving Size: 2 People



 

Preparation Instructions

Whisk together the eggs, milk, almond extract, honey and salt. Stir in the rolled oats, half of the chopped peaches and nuts if using.

Place a few of the peaches on the bottom of a small baking dish or individual baking dishes such as ramakins.

Pour in the custard oats. Top with the remaining thin slices of peaches.

Make up to this point the night before, cover and bake the next morning.

Preheat oven to 375. Bake for 20-30 minutes* until it feels slightly firm when you touch the center of the baked oatmeal.

This can be also multiplied and placed in a large dish. This custard will also last as leftovers for a couple of days of easy breakfasts.

*If you increase the number of servings, add at least 10-15 minutes of bake time for every couple of servings added. For example, if you do 6 servings, plan to bake this dish for up to one hour. I know it sounds extreme, but it is worth the wait!
