Watermelon Stack with Tequila Lime Shrimp & Elote Corn

The Watermelon Stack can be made up to the day prior. Soak the corn and skewers, if wooden, for the shrimp. Start grilling the corn. Whip up the elote sauce. Prepare the shrimp. Whip up the dressing for the Watermelon Stack. Sear the shrimp. Paint the sauce on the corn.

Watermelon Stack Salad

Ever sliced your salad before? Stack and press this salad together for something new & exciting. Of course, this is a touch time consuming and the ingredients work well just tossed together in a mish-mash of fun instead. Substitute pine nuts for the cotija cheese to make this dairy-free/vegan.

The essence of a margarita marinates shrimp that is grilled and finished with lime and a sprinkle of coarse salt. Cook on the grill or with your broiler until thoroughly pink and just barely firm to the touch.
