Summer

Tomato, Basil, Mozzarella Caprese

Also known as Insalada Caprese this Italian salad creates magic with the combination of these three simple ingredients when they are at their peak in summer.

Ingredients

  • 1 tomato, large or 2 medium
  • 4 ounces fresh mozzarella
  • ¼ cup fresh basil, a small handful
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 pinch salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Slice the tomatoes and fresh mozzarella or cut each into chunks- either way keep it looks loveliest when they are a consistent size or shape.

Tear or slice the basil into rough strips. Arrange the cheese and tomatoes on to plates or toss in a bowl. Sprinkle the basil on top. Drizzle on the olive oil and balsamic to taste. Sprinkle on the salt and black pepper again to taste.

Serve immediately.
