Zuccquinoa Burgers with Grilled Zucs, Peaches, and Fries

Shred the zucchini, salt and rest. Cook up the quinoa if not already done. Heat the grill. Cut the fries and start grilling them. Cut up the zucchini and peaches. Mix the ‘burger’ mixture together. If you want to only use the grill, place a cast iron pan on the grill to heat up or a small roasting pan. Ball up the burgers and cook on one side (follow the regular stove top directions, if you prefer). Bake on one side, flip and sear on the other. As the fries come off, sear the zucchini and peaches on each side. Make the dressing and any toppings for the burgers. Serve altogether with your favorite dipping sauces.

Quinoa Zucchini Burgers

Shreds of zucchini add heartiness to these vegetarian burger-patties that are lovely bundled into lettuce or even a whole grain bun. Add your favorite toppings, including seared zucchini slices, pickles, tomatoes, mayo, mustard or whatever topping makes a burger a burger for you. Start with cooked quinoa.

Grilled Fries

We live in a society that loves fries. The thought of making them from scratch is pretty foreign to most of us, the thought of tossing them on the grill fresh may be a new experience for you. But, like so many things you never have done— you never know, it could blow your mind. Keep the grill low and the cook time slow and it will be all good. Plenty of salt and oil will help, too.

Grilled Zucs & Peaches

The grill is especially friendly to both zucchini and peaches, so here they are together at last. The peaches are especially tender after grilling, so simply slice and arrange with the zucchini. The dressing can be slathered and dripped across the top.
