Ricotta Pear Pizza & Arugula Salad

1. Slice all of the vegetables while the pizza dough rests or rises.
2. Spread out the dough and assemble the pizza to bake.
3. While the pizza bakes, toss the salad.
4. Serve altogether.

Ricotta Pear Pizza

Creamy dollops of ricotta cheese are dispersed between thin, sweet roasted pears spread on top a garlic-oil sauce. I fell in love with this pizza topping combination when I lived in Seattle and it was occasionally offered by the slice at Pagliacci Pizza.

Arugula Parmesan Salad

The bitter bite of arugula is paired with strips of parmesan and a drizzle of sweet vinegar. Use a thick, aged balsamic or sweeten up a thinner balsamic with a bit of honey, maple syrup or agave nectar.
