Garlic Scape Tahini Dressing

Garlic scapes or snakes are the curling tops of the garlic that provide a bright green garlic flavor. A blender is ideal for this recipe, however, mincing up garlic scapes and whisking in the remaining liquid ingredients will work, too.

Ingredients

  • 2 garlic scapes, or cloves, minced
  • 2 tablespoons lemon juice
  • ½ cup tahini
  • ½ cup greek yogurt
  • 2 tablespoons extra-virgin olive oil

Serving Size: 4 People



 

Preparation Instructions

Place the minced garlic scapes, lemon juice, tahini, and greek yogurt in the blender. Whip it up. Drizzle in the olive oil while blending on low.

Alternatively, mince up the green garlic scapes and whip with the lemon juice, tahini, and greek yogurt. Slowly drizzle in the olive oil while beating.

Serve or store for up to a week.
