Week of January 12, 2014

All right, grab your favorite roots and florets. Let’s warm up our homes and roast them into deliciousness.

Start this meal plan by peeling and chop your roots and florets into big piles, toss with olive oil, salt and bake away until tender to the bite. Next, simmer some lentils for the Roots, Shoots & Lentils dish, which lasts for a couple of easy meals. The next day, serve the Roasted Sweet Potatoes & Florets as a side to the comforting Pasta Bake with Garlic-Walnuts.

Double up on your lentils and a couple days later the Lentil Soup will be even faster to prepare. It is lovely paired with a simple Avocado, Pear & Almond Salad.

Roast up extra beets as well to be whirled into a Beet Hummus. Please note- the recipe instructs to boil the beets, but roasting works too.

For a meat dish this week, the Broccoli-Orange Beef Stir-Fry is another great use for your florets and the beautiful citrus available this time of year. Of course, substitute regular oranges for the blood orange ones I used for the photo.

Last year, I had a grapefruit tree in my yard and even though I cannot freshly pick them I am excited their season is pack. One of my favorite dishes created because of that lovely ruby red tree was the Grapefruit Salmon. Serve it with the Ginger Turnips & Greens with your favorite French bread to wipe up any leftover sauces.

Leftover rice from the stir-fry is great with eggs for breakfast. If you do not have the nori, skip it or toss in a few shreds of your favorite fresh greens, such as arugula or spinach. Serve with the easy Cardamom Ginger Grapefruits, too.

Finally, I have been feeling a bit nutty lately and although I am not a big smoothie drinker this time of year, I know some of you are, so try out this protein packed Banana & Nut Butter Smoothie. It is especially nice with the Peanut Butter & Banana Granola sprinkled on top.

For a quick lunch, fancy up your PB&J’s with Banana-Raisin-Nut Butter Sandwiches instead.
