Avocado Enchiladas with Cinnamon-Beets

This menu is especially fun for kids, as it hides the peas into tasty avocados and sweetens up the beets by incorporating apples. Prepare all of the vegetables and then start the enchilada sauce & filling. When the enchiladas bake, work on the beet-saute. When the enchiladas are hot your beets will be cooked through.

Avocado & Pea Enchiladas

Grab a bag of frozen peas and ripe avocados to stuff these tortillas with goodness. Your favorite jar of salsa works for the enchilada sauce or try blending up roasted tomatoes with a pinch of two of spices as the recipe calls for. Skip the cheese to make these vegan or dairy free.

We first created this to feed to our baby and ended up devouring it ourselves. We gave her some too which she happily gobbled up. Add more cinnamon or even a dash of ginger to your own personal taste and make this your own.
