Beet-Apple Saute

 

We first created this to feed to our baby and ended up devouring it ourselves. We gave her some too which she happily gobbled up. Add more cinnamon or even a dash of ginger to your own personal taste and make this your own.

Ingredients

  • 2 beets, about 1 pound, any color
  • 1 apple, medium, any variety
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon, or more to taste

Serving Size: 2 People



 

Preparation Instructions

Peel the beets and shred finely. Leave the peel on the apple and shred or chop fine. The shred attachment on a food processor is excellent for this dish when you double or triple the amount.

Heat the olive oil in a skillet over medium heat. Add in the beets, apples and saute for 8-10 minutes increasing the heat slightly. Add a splash of water and continue to steam until the beets are softened. Add the salt and cinnamon, adding more or less to your personal preference.

Add more water and cook longer to your desired tenderness.
