Black Eyed Peas, Vegan Dirty Rice & Wilted Greens

1. If the brown rice is not quite cooked, do this now.
2. Now start with the black eyed peas dish, although chopping all of the veggies that you need for the rice at the same time is a great idea.
3. Next saute the veggies for the rice.
4. As each dish is finishing up, wash, dry and chop the greens. Wilt them quickly and serve all three dishes together in large bowls.

Black-Eyed Peas

Prosperity. Luck. We all could use a bit more in the New Year and black-eyed peas signify all of it. Ham or bacon supposedly adds ‘positive motion forward’ since the pig is a front footed animal, but leaving it out and adding a dash of smoked paprika is tasty (and dare I say: lucky!) as well. Dry black-eyed peas take about 20-30 minutes to cook, but if a can of beans is easier for you— go for it.

Vegan Dirty Rice

Be careful. This dish can be addicting. Our vegan variation omits the chicken livers, pork and other meat, so consider this “almost” dirty rice since we just focus on melting the veggies into the rice and a bit of spicy cajun seasonings.
