Start with the skillet potatoes. Whip up the spice blend and sauce. Make a bit extra sauce to serve with the potatoes. When the potatoes are almost done and cook up the eggs. Serve the greens & potatoes together. Assemble the Sandwiches and serve with the potatoes and extra sauce.

Skillet Potatoes

Flavorful potatoes, thinly sliced sear up quickly in a skillet- perfect for a starchy side or to use with eggs for breakfast. This is an excellent use for those rich flavored Farm Share potatoes. If they start at crazy sizes just thinly slice them evenly and toss in any tiny potatoes unsliced.

Cajun Spice Rub

This simple rub turns a regular piece of meat or tofu into something extra special. Adjust the seasonings to your taste. Start with a pinch of cayenne and add more as you are able to tolerate it. This is a simple blend that can be dolled up with extras such as garlic, onion or mustard powders.

Cajun Egg Sandwich

It’s almost a New Orleans Egg McMuffin. Make your Cajun spice blend from scratch or use a blend you already have. Either way just a dollop of this creamy spiciness takes an ordinary egg sandwich up a few notches. Add more veggies if possible, just give them a quick sear in the pan alongside the egg.
