Start by cooking the Wild Rice and roasting the squash. Next prepare and cook the beets. Use the beet greens instead of the kale. When the rice and squash are almost done, start the Tilapia. While the fish poaches, saute the beet greens. As soon as the fish is done, plate the rice and veggies with the Tilapia and sauce drizzled on top.

Roasted Butternut Squash & Greens

Butternut squash is slowly roasted while you caramelize onions and sauté up kale, spinach or whatever greens you have available. Toss the mess together as a topping for a pasta, creamy polenta or even as a side to a slow-melt-in-your-mouth-roasted meat. If you are feeling adventurous, roast up the squash seeds from the butternut squash and use as a topping.
