A simple egg breakfast that takes just a few minutes to prepare. Start toasting the bread just prior to starting the eggs. They will be done at about the same time in less than about 8 minutes. Pair this dish with a piece of fruit. Grapefruit is suggested but use your favorite.

Cheesey Egg Scramble

Scrambled eggs but a bit more fun dressed up with cheese and whatever veggies may be available. This basic recipe uses green onions and a bit of cheese. Feel free to use most any cheese in your fridge in your fridge, even the remnants of a fancy one will be great. Try goat, parmesan, pepper jack, dill havarti, brieā€¦ what will you do?

Whole Wheat Toast

Add this to any breakfast or a bowl of soup or a dinner that needs a bit more fiber. Be sure to use a bread that uses whole wheat flour as the first ingredient. Avoid enriched whole wheat flour which is basically white flour stripped of its nutrients with some brown coloring and vitamins added back in. May as well start with the real thing including the bran and wheat germ. Also, enjoy your toast with just a bit of real butter rather than a dollop of fake trans-fat laden margarine or butter lightened with vegetable oils. Just eat a bit of it and enjoy every bite!

Simple fruit to accompany any breakfast. Grapefruit is typically available from October through June and it is grown mostly in Texas, California and Florida.
