Garbanzo Burgers with Apricot Celery Salad

Mix up the burgers. Slice the celery, make the dressing and toss together. Set aside to marinate. Start searing the burgers. If you have a spare moment as they sear, slice the apricots and prepare the burger fillings. When the burgers are done toss the salad and assemble the burgers.

Garbanzo Burgers

These vegetarian burgers blend up quickly in a food processor and are seared like pancakes making for a slightly more moist veggie burger. That being said, try skipping the buns just as Heidi Swanson created for a more flavorful, less starchy veggie-burger experience.

Apricot Celery Salad

The crunch of the celery against the creamy sweetness of the apricots is delightful. Try this salad when you are ready to branch out of the ordinary green salad and you have a few apricots needing attention. Other stone fruits, such as peaches may work as well, but I have yet to try it.
