Garbanzo Burgers with Cucumber & Cantaloupe Green Salad

Shred/cut the cucumbers and salt them. Let them drain and work on the burgers. Once the burgers are searing, work on the salad ingredients. Whisk the Tzatziki and finish up the burgers. Dressing the salad at the last minute.

Tzatziki

The traditional cucumber yogurt sauce is easy enough to make on your own for dolloping and smearing on a variety of dishes. We use just a couple cloves of garlic, but if you are a garlic lover feel free to increase the cloves to your desired potency. Draining the cucumbers is a key step to having a thick luscious sauce.

These vegetarian burgers blend up quickly in a food processor and are seared like pancakes making for a slightly more moist veggie burger. That being said, try skipping the buns just as Heidi Swanson created for a more flavorful, less starchy veggie-burger experience.

Cucumber & Cantaloupe Green Salad

Summer sweet melons and crispy cucumbers are tossed with a Lemon-Lime Yogurt Dressing. Goat cheese and pistachios add another element, but are each optional. The citrus zest makes the dressing delightful, but if you are without a microplane or fine grater, no worries, the juice is more important.
