Sassy up your next veggie platter with roasted veggies.
1. Start with the Sweet Potato Fries, then do the Pan Roasted Carrots & finally the Beet Chips.
2. Mix up the Yogurt-Ranch in between all of that roasting and cooking.
3. You could also add Kale Chips into the mix as well.

Sweet Potato Fries

Sweet Potato fries have a bit more of a nutritional boost than their white potato counterparts. Roasting them brings out the natural sweetness, which makes these fries an extra lovely treat to eat.

Pan Roasted Carrots

The high heat of the pan roasts carrots until they darken and caramelize. The best way to attain this is to not crowd the pan. They can be snug and cozy, but not overlapping. Each side of the carrot needs direct heat. Either work in batches or pull out a second pan to make this dish come together faster.

Beet Crisps

At the start of spring or fall, baby beets arrive and if you are lucky they will still have their greens attached looking oh so charming. With a rough scrub and a sharp knife these thin beet slices sear up to quickly become salty-olive oil-chip-like. If you enjoy Kale Chips- these are rather reminiscent.

Yogurt Herb Ranch Dressing

This easy dressing is an excellent substitute for chemical-dense ranch or buttermilk dressings or dips. Adding yogurt will increase the amount of good bacteria acidophilus in your dressing. Although, thick cultured buttermilk is a great substitute. If you want a thicker, ranch to dip, use greek yogurt or cultured sour cream instead. If using a fresh lemon, add the microplane grated lemon zest for a flavor boost. Use your favorite herbs that are available. If you are not a garlic lover, this is tasty enough without it.
