Sage Squash Egg Bakes with Beet Brown Rice & Kale Chips

If the squash is not already roasted and pureed, start with this recipe. Create the Beet Brown Rice, as soon as it is steaming away. Assemble the Kale Chips on a baking sheet, set aside. Put together the Sage Squash Bakes. You can even double the recipe for a few extras for breakfast the next day. Bake at the same time as the Kale Chips.

Beet Brown Rice

The deep color and flavor of beets enhance brown rice into a crimson & vitamin rich side. Use short brown rice and the risotto style of slowly adding the red wine and broth to give it a slightly creamier essence. If you are feeling less desire to be strapped to the kitchen, toss it in the pot and give it a stir more occasionally. Reserve any greens from the beets to saute lightly and serve alongside.

Butter is browned and scented with sage to become the base flavor to these individual egg bakes. The original recipe serves only one, but multiply it to serve the exact number in your crowd.

Kale chips are probably our favorite way to make kale. Roasted with a light drizzle of olive oil, salt and black pepper, if you so choose. They are simple to make and addictive to boot.
