Beet Brown Rice

 

The deep color and flavor of beets enhance brown rice into a crimson & vitamin rich side. Use short brown rice and the risotto style of slowly adding the red wine and broth to give it a slightly creamier essence. If you are feeling less desire to be strapped to the kitchen, toss it in the pot and give it a stir more occasionally. Reserve any greens from the beets to saute lightly and serve alongside.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup onion, finely chopped
  • 2 cups beet, peeled and diced small
  • 1 cup brown rice
  • 1 cup red wine
  • 3 cups broth, more or less
  • ½ teaspoon salt, more or less as needed to taste
  • ¼ teaspoon black pepper

Preparation Instructions

Place the broth in a small saucepan over medium heat. Bring up to a light simmer.

Place the olive oil in a larger saucepan over medium heat. Once it is warm add the onions and saute lightly for about 3 minutes, until barely translucent. Add the chopped beets and brown rice.

Toss lightly. When they start to stick to the pan add half of the red wine to deglaze the pan. Slowly pour in a 1/2 cup of broth. Cover. Stir. Simmer. Stir. When the broth is absorbed add more broth. Cover, stir, simmer and repeat until the rice is plump and cooked through. You may need more water or broth.

If you want to give less attention to your rice. Just add all of the ingredients at the same time and simmer away for about 35 or more minutes. Stir periodically, but plan to keep the lid on for most of the cooking process. If using a pressure cooker, it will be only 10-15 minutes of cooking.

In the final few minutes, finish with the remaining red wine. Increase the heat briefly to help the wine absorb and then serve.
