Shamrock Scrambled Eggs, Baked Beans & Irish Soda Bread

Bring these leftovers together for breakfast. The Shamrock Butter, bread & beans can all be made ahead. Simply bring the Shamrock Butter up to room temperature, swirl in with the scrambled eggs and/or spread on to the Irish Soda Bread. Serve with the Baked Beans to make this a traditional Irish breakfast feast.

A sweet & slightly savory thick sauce coats white beans in this traditional, yet less chemical & preservative laden dish. Start with dried white navy beans, soaked and cooked until tender or canned white beans.

Irish Soda Bread

This bread comes together so quickly you will be tempted to make it daily. Only five simple ingredients. No rising. No real kneading. Just slap it together and place in the oven ideally on a cast iron pan or a stone for a nice golden crust on the bottom.

'Shamrock' Butter

Wood sorrel is often mistaken for the traditional Irish shamrock, so in this spirit whip up your own ‘shamrock’ butter with the bright, almost lemony sorrel instead. If you had visions of mint shamrock shakes when you read shamrock butter and want to try mint butter instead, I would welcome the idea, although I have yet to try it myself.
