Irish Soda Bread

 

This bread comes together so quickly you will be tempted to make it daily. Only five simple ingredients. No rising. No real kneading. Just slap it together and place in the oven ideally on a cast iron pan or a stone for a nice golden crust on the bottom.

Ingredients

  • 3 cups flour, whole wheat
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk, or soy milk & 2 tablespoons lemon juice*

Preparation Instructions

Preheat the oven to 375.

Sift together the flours, baking soda and salt. Create a hole in the center of the bowl and slowly pour in the buttermilk, stirring to bring the flours in gradually.

Once it is in a nice clump of a ball, knead in any remaining flour. No need to over-knead. The dough will feel sticky, but if it seems too wet sprinkle in a bit more flour.

Round the ball and slice an X into the top. This will help the center to evenly bake as well as give that pretty Irish Soda Bread presentation.

Place on a pizza stone or in a cast-iron pan.

Bake for 35-45 minutes. You will know it is done, when it appears golden and makes a hollow sounds when you tap the bottom.

Serve immediately. Day-old bread is best toasted… and smeared with butter.

*If using the vegan substitution, simply combine the lemon juice with the soy milk and allow to rest for about 5 minutes prior to using. The soy milk may clump and curdle a bit- that is fine.
