This is a simple Vegan soup featuring the Season’s green vegetables. If you would like a bit more protein add in some cooked white beans and/or Pine Nuts.

If you are a cheese-eating Vegetarian, sprinkle the top with grated Parmesan.

If you are a meat-eater, add in the Sausage ‘Meatballs’ either using Poultry sausage or Italian pork sausage.

Serve with a small loaf of fresh Bread with soft Garlic-Butter or Olive Oil & Balsamic to dip.

Spring Minestrone

Bright shades of green decorate this soup as a reminder of the new life of Spring. This is a great soup to add any beautiful Spring vegetables or herbs that are available to you, such as fava beans or fresh peas. This recipe is a very basic version with simple ingredients, but try and embellish a bit if possible and if you have a few sprigs of fresh herbs available do not hesitate to stir them in at the end.

Sausage 'Meatballs'

Cheat a bit! Squeezing Italian sausage into ball size creates quick, flavorful ‘meatballs’ without even combining ingredients. Be sure to buy sausage that is soft in its casing not smoked, which will feel harder to the touch. If buying from a butcher, just make sure it is not smoked or par-cooked.
