Sausage 'Meatballs'

 

Cheat a bit! Squeezing Italian sausage into ball size creates quick, flavorful ‘meatballs’ without even combining ingredients. Be sure to buy sausage that is soft in its casing not smoked, which will feel harder to the touch. If buying from a butcher, just make sure it is not smoked or par-cooked.

Ingredients

  • 8 ounces italian sausage , pork or turkey, raw in casings

Serving Size: 2 People



 

Preparation Instructions

Unravel the end of the sausage that already appears to be slightly unwound. If this does not work, cut into the end slightly.

Hold you fingers together about an inch from the base and push out a dollop of sausage. Shape slightly into a ball. Continue along the sausage until it is all squeezed out.

Here are a few methods to cook them…

Bake:
Preheat oven to 375. Spread out on a baking sheet lined with foil. Bake for 8-12 minutes until cooked through in the center.

Boil:
Drop into a simmering soup, sauce, or broth. Simmer in the liquid for 3-6 minutes until cooked through.
