Thai Red Curry Bowl with Thai Melon Salad

Steam up the rice first. Slice all of the vegetables for the curry. Whisk up the dressing for the salad. Slice or ball up the melon. Make the sauce for the curry. Toss the melon with the dressing. Simmer the vegetables in the sauce. Serve the curry on top of the rice with the melon salad alongside. The nuts are an optional addition.

There are several methods for preparing rice. Brown rice especially is a bit more time consuming as it still contains the nutrient packed outer grain. This recipe contains three different methods for preparing brown rice. Try them out and stick with the one that produces the rice just the way you like it.

These methods can work for long, short, medium or other types of brown rice.

Thai Red Curry

Simply whisk together the sauce over heat and drop in the summer vegetables to lightly steam in the red thai curry sauce. The peanuts and cilantro are optional garnishes, although the peanuts add lovely flavor and protein. Serve over brown rice with a side of tofu, chicken or shrimp if desired.

Spicy, salty and a touch sweet, this Thai-inspired melon & cucumber salad is cool, refreshing and on fire at the same time. You could potentially add more veggies such as bell peppers or bean sprouts if desired.
