Summer

Thai Red Curry

 

Simply whisk together the sauce over heat and drop in the summer vegetables to lightly steam in the red thai curry sauce. The peanuts and cilantro are optional garnishes, although the peanuts add lovely flavor and protein. Serve over brown rice with a side of tofu, chicken or shrimp if desired.

Ingredients

  • 1 can coconut milk
  • 2 tablespoons fish sauce , or half the amount of soy sauce if vegetarian
  • 2 tablespoons red curry paste, or more to taste
  • 1 teaspoon sugar, or more to taste (coconut or date sugar taste best here!)
  • 1 onion, cut in slices
  • 1 bell pepper, cut into slices, discard the stem & seeds
  • ½ lb green beans, trimmed
  • 1 zucchini, cut in slices on a diagonal
  • 6 sprigs cilantro, washed and dried
  • ¼ cup peanuts, roughly chopped
  • 2 limes, or one large

Serving Size: 2 People



 

Preparation Instructions

Place a saucepan over medium-high heat. Whisk in the coconut milk, fish or soy sauce, red curry paste and sugar. Bring up to a simmer for 3 minutes. Taste. Add a bit more curry paste, soy sauce or sugar at this point if it needs a bit more flavor.

Add in the sliced vegetables. Start with the sliced onions, simmer a few minutes, add the bell pepper slices, simmer for a few more minutes, add the green beans and zucchini until everything is combined and steaming. Squeeze in half of the lime juice. Slice the rest of the lime.

Add more curry paste if you like it spicier. More sugar if you want it sweeter. And more fish sauce if it needs to be saltier.

Serve over steamy brown rice or noodles and garnish with cilantro, peanuts, and lime slices.
