Thai Red Curry Tofu

Prepare and cook the brown rice. Press the tofu and drain the excess liquid. Slice all of the veggies. Bring the curry sauce to a low simmer. Poach the tofu. Start to steam each veggie. Stir the poached tofu into the finished curry and serve on top of the steamy brown rice.

Brown Rice

There are several methods for preparing rice. Brown rice especially is a bit more time consuming as it still contains the nutrient packed outer grain. This recipe contains three different methods for preparing brown rice. Try them out and stick with the one that produces the rice just the way you like it.

These methods can work for long, short, medium or other types of brown rice.

Poached Tofu

Tofu is fabulous in stir-fry whether you avoid meat or not. Allow some time to press & drain the tofu as it adds to the texture and helps with the cooking process. This poaching method is faster than pan frying, no oil is needed and it is still flavorful.

Thai Red Curry

Simply whisk together the sauce over heat and drop in the summer vegetables to lightly steam in the red thai curry sauce. The peanuts and cilantro are optional garnishes, although the peanuts add lovely flavor and protein. Serve over brown rice with a side of tofu, chicken or shrimp if desired.
