Velvety Broccoli Soup with Crimson Quinoa & Beets

Prepare the beets and saute in the orange sauce until it is a glaze. After that is started, simmer cauliflower and the quinoa. Prepare the broccoli for the soup and the blood orange for the quinoa. Finish the soup and allow it to simmer on very low heat. Toss the quinoa with the blood orange. Sprinkle nuts such as pine nuts or sliced almonds for a bit extra protein on any of these three vegan dishes.

Pan seared beets are simmered in orange juice until they sweeten up and have a gooey sauce surrounding them.

Velvety Broccoli Soup

Cauliflower makes the base, pureed into creamy loveliness accented with broccoli. Almost cream of broccoli soup, but without the heavy cream. This base soup will shine with your favorite cheese stirred in as well. Or if you want to keep it vegan, nutritional yeast and a few pine nuts work great too.

Blood Orange Quinoa

Cook quinoa up in a bath of water and orange juice to give a tangy, citrus undertone. When done, toss in segments of oranges for even more delight. While blood oranges add a unique flavor, most any other orange will work too if you cannot find this rosy variety.
