Collards with Cherries

 

A slight twist on steamed collards with a few cherries to absorb some of the wine. Red wine or broth can work instead of the white wine. Capers add a bit of briny bite, but are optional.

Ingredients

  • 1 bunch collards
  • ½ cup white wine
  • ½ cup dried cherries
  • 2 teaspoons capers
  • 1 pinch salt, or more to taste
  • 1 pinch black pepper, to taste

Serving Size: 2 People



 

Preparation Instructions

Wash the collards well. Don’t worry about drying the greens. Stack them up and slice thinly into shreds. Place in a skillet over high heat.

Begin to steam them and as soon as they wilt add in the white wine, cherries and capers. Give them about 2 minutes to absorb, remove from the heat. Season to taste with salt & pepper and serve while hot.
