Creamy Cauliflower Turkey Gravy

 

This creamy, dairy-free sauce is perfect for leftover turkey and any moment when you would use a creamy sausage gravy. Such as with the classic Biscuits n’ Gravy. This is one of my favorite dramatic substitutions that still encompasses so much flavor! Try it with your turkey leftovers as soon as they are available. If you have leftovers of cauliflower soup, use that instead of roasting and pureeing the cauliflower from scratch.

Ingredients

  • 1 lb cauliflower, about 1/2 head
  • 1 clove garlic
  • 1 teaspoon salt
  • 2 cups broth
  • ¼ cup almond
  • 1 cup turkey, shredded and in chunks
  • ¼ teaspoon black pepper

Serving Size: 4 People



 

Preparation Instructions

Place the cauliflower cut into chunks, garlic, and salt in a skillet with half of the broth. Bring up to a simmer, covered with a lid.

Meanwhile, place the remaining broth and almonds in a blender. Blend until smooth and creamy without any chunks.

Once the cauliflower is tender, add it to the almond-broth in the blender and blend until creamy and smooth.

Return the sauce to the skillet, fold in the turkey. Bring up to a low simmer. Add more salt and the black pepper to taste.

Serve over potatoes, eggs or biscuits for breakfast.
