Crispy Chicken Sticks

 

If you normally buy frozen chicken nugget things you may stop after you realize how tasty, easy & healthy these actually are to create from scratch.

Ingredients

  • 10 ounces chicken, tenders or breast
  • 1 teaspoon salt
  • 1 cup cornmeal, finely ground or almond meal works well too
  • 1 tablespoon vegetable oil (high heat), or more if needed

Serving Size: 2 People



 

Preparation Instructions

Trim the chicken as needed into even sized strips. Toss the cornmeal and salt together on a plate. Coat each piece of chicken in the cornmeal. Shake off any excess.

Preheat the oven to 400.

Spread the oil on to a baking sheet. Dip the chicken lightly on one side into the oil and turn over. Add more oil if needed. Place the chicken pieces at least an inch a part.

Bake for 8-14 minutes depending on the thickness of the chicken and until it is cooked through, no longer pink in the center.
