Dirty-Martini Kale

 

Do you love the briny, tangy goodness of cocktail olives? This dish is simply kale steamed with a splash of ‘olive juice’, vodka or gin and sliced green olives. Just like a dirty martini. Use any olives that you adore, we actually prefer the garlic stuffed olives or the classic olives stuffed with pimentos.

Ingredients

  • 1 bunch kale
  • 2 tablespoons gin, or vodka
  • ¼ cup green olives, sliced with 1 tablespoon of the 'olive juice'

Serving Size: 2 People



 

Preparation Instructions

Wash the kale, shake dry and stack up in a pile. Thinly slice.

Toss the kale in a skillet over medium heat. Immediately pour in the gin or vodka. Take care not to catch it on fire if you are on a gas stove. If you do just quickly put out any flames with a lid. Quickly.

Once the gin or vodka has steamed off, toss in the sliced olives and brine. Taste. Add another splash of brine if you want a saltier, tangier flavor.

You may want to add a pinch of salt, but you may not, since the brine generally carries plenty with it.
