Greek Greens Bake

 

Everything about this dish reminds me of a simple, toss it together version of the Greek spinach pie, spanakopita. I love having the essence and flavor without dealing with filo dough. Use this simple Baked Farro recipe to cook up the grains or for a gluten-free version use leftover brown rice.

Ingredients

  • cups farro, cooked, or cooked brown rice
  • ½ cup onion, diced small
  • cups greens, finely minced
  • 1 cup plain yogurt
  • 2 eggs
  • 1 cup feta cheese, crumbled
  • ½ cup fresh herbs, minced, such as parsley, dill, & oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup grated parmesan cheese

Serving Size: 4 People



 

Preparation Instructions

Preheat the oven to 375.

In a skillet over medium heat, add the onions and lightly saute with the olive oil until it is glistening and slightly translucent. Toss in the greens briefly for about 2 minutes until they are wilted. Turn off the heat.

Fold together the farro or brown rice, yogurt, eggs, half of the feta cheese, fresh herbs, salt and black pepper. Once these are combined, fold in the cooked onions & greens.

Rub olive oil on the bottom of an 8×8 baking dish. If increasing the servings in this recipe, use a larger dish accordingly. Spread the grains & vegetables into the pan smoothly.

Cover with foil and bake for 25-35 minutes until the center feels firm to the touch. Remove the foil, sprinkle on the rest of the feta cheese and the grated parmesan. Bake uncovered for 5-10 more minutes until the top is golden. If you want to speed up this final part, place under a low broiler for just a few minutes watching carefully until it becomes golden.
