Spring

Lemon Roasted Asparagus

 

Simple reminder that Spring has arrived with a bright burst of lemon. Use olive oil to roast them, but if you are feeling extravagant add a few dabs of butter to the final dish.

Ingredients

  • 1 lb asparagus
  • 1 tablespoon olive oil, extra virgin
  • ½ teaspoon salt, or more to taste
  • ½ teaspoon black pepper
  • 2 lemons

Serving Size: 2 People



 

Preparation Instructions

Preheat oven to 425. Gently break the ends of the asparagus off to keep only the tender part. Toss with the olive oil and sea salt and spread on a baking sheet. Cut 1 lemon in half and bake alongside. Roast for 15-25 minutes (depending on thickness of asparagus) until golden and slightly tender.

Cut the other lemon into slices for garnish. When the asparagus is ready, gently squeeze the hot lemons on top of the asparagus. Take care to not burn your hands, either wrap them in a towel or use tongs. Be aware and remove any seeds. Toss the asparagus in the lemon juice, serve garnished with the lemon slices.
