Lime Sweet Potatoes

 

The twist of lime gives an extraordinary shout out of flavor just perfect for sweet potatoes. If you can’t find orange sweet potatoes, ask for garnet or jewel yams as they are sometimes labeled.

Ingredients

  • 2 sweet potatos, medium-sized
  • 1 lime, zest and juice
  • ½ teaspoon salt, more or less, to taste
  • 1 pinch black pepper, freshly ground, to taste

Preparation Instructions

Preheat the oven to 425.

Scrub the outside of the sweet potatoes lightly to remove any dirt or grim. Prick all over the potato with a paring knife. Place on a baking sheet in the oven for about 30-40 minutes.

Meanwhile, zest the lime into a large bowl. Cut the lime in half and squeeze in the juice, take care to remove any seeds.

Remove the sweet potatoes from the oven and place in the freezer or outside for just a few minutes until they are cool enough to handle. Remove the skin and squeeze out the soft pulp. Place in the bowl with the lime. Fold together.

Season with salt to taste.
