Spring

Rhubarb Minted Peas

 

Maple glazed rhubarb is tossed with mint & peas to create a tangy, yet slightly sweet, side dish. Fresh peas are ideal, but frozen peas can work in a pinch if necessary. Just be sure to use fresh mint.

Ingredients

  • ½ cup rhubarb, cut in 1/2 inch pieces
  • 1 tablespoon maple syrup, or honey
  • 3 tablespoons water
  • 2 cups peas, fresh or frozen
  • ¼ cup mint
  • 1 pinch salt

Serving Size: 2 People



 

Preparation Instructions

Thinly slice the rhubarb and toss with the maple syrup and water. Bring up to a simmer over medium-high heat until the water is full absorbed and the rhubarb is tender & sweet.

Toss in the peas and turn off the heat. Fold in the mint and pinch of salt.

Serve hot or chilled. Sprinkle a bit more fresh mint on top for garnish.
