Steel-Cut Blueberry-Almond Oatmeal

 

This is an overnight recipe, where you simply soak the steel-cut oats starting the night before. The next morning the steel-cut oats are faster than the typical 30-45 minutes of simmering they normally require, but anticipate this taking at least 8-15 minutes depending on how high in altitude you may be.

Double this recipe as the oats make great leftovers for the next morning’s breakfast. Store the cooked oatmeal plain without the fruit or nuts.

Ingredients

  • ½ cup steel cut oats
  • 3 cups water
  • ½ cup blueberries
  • ½ teaspoon almond extract
  • ½ sliced almonds

Serving Size: 2 People



 

Preparation Instructions

Starting the night before, pour half of the water warmed over the steel-cut oats.

The next morning, drain off the soaking liquid and bring the oats and remaining water up to a boil. Simmer for 8-15 minutes depending on how high in altitude you may be or how tender you enjoy your oats. Add more water if needed.

Once done, stir in the blueberries, almond extract and sliced almonds.
