Strawberry Granola

 

Strawberries make the granola sweet, a bit tangy and low in refined sugars, but the flavor is subtle. If you need even more strawberry action, add a handful of dried strawberries to highlight the fruit a bit more in this tasty make ahead breakfast.

Ingredients

  • 3 cups rolled oats
  • 1 cup strawberries, blended
  • ½ cup coconut oil
  • ¼ cup honey, or agave nectar, add more to taste
  • ¼ teaspoon salt
  • 1 teaspoon vanilla, optional

Serving Size: 6 People



 

Preparation Instructions

Preheat the oven to 300.

Whisk together the blended strawberries, coconut oil, honey, vanilla and salt. Heat up in a saucepan if the honey is not incorporating smoothly.

Spread the oats in a baking pan and drizzle the liquid on top. Fold.

Bake for 20 minutes. Stir the granola and then press slightly together. This will help it clump up.

Continue to bake, checking, and flipping until it is properly dried out and just starting to crisp. This will take another hour up to two hours.
